  • 2 cups long grain white rice uncooked (not instant)
  • 4 cups water
  • 1 bay leaf
  • 1 tsp cumin
  • 1.5 tsp kosher salt plus 1/2 tsp (or to taste)
  • 1.5 tsp olive oil
  • juice of 1 lime (about 3 tbsp)
  • juice of 1/2 lemon (about 2 tbsp)
  • 1/4 cup loosely packed cilantro minced (only leaves, no stems)

  1. Rinse rice in mesh strainer to remove starches.

This will help rice be a little more fluffy and a lil less mushy.

    (optional, but recommended)

  2. Bring 4 cups of water to boil in a large pot.

  3. When water is boiling stir in rice, 2 tsp kosher salt, cumin, bay leaf, and olive oil. Reduce heat to low. Cover and cook for 15 minutes.

  4. Remove bay leaf. Fluff with fork and stir in cilantro, lime & lemon juice, and 1/2 tsp kosher salt. (or salt to taste!) Enjoy!
