If nachos and tater tots had a baby, this would be it. Totchos are crispy, cheesy, fully loaded perfection and might just be my favorite way to turn a bag of frozen tots into dinner. They are easy to throw together and we ALL love them!

These loaded totchos start with golden tater tots, get piled high with taco seasoned ground beef, melty cheese, black beans, and corn, then finished with fresh toppings like avocado, tomatoes, lettuce, and a drizzle of sour cream. They’re super easy, totally customizable, and always a hit whether you’re feeding your family or setting them out for game day.

  • lean ground beef (I use 90/10 or 93/7)
  • Taco seasoning
  • Shredded cheese (cheddar, colby jack, or a mexican blend)
  • Cheese dip (store bought or homemade)
  • Black beans
  • Corn
  • Lettuce
  • Tomatoes
  • Avocado
  • Sour cream (or Greek yogurt)

Easy Homemade White Cheese Dip (Restaurant-Style)

If you can’t find store bought white cheese dip, this quick homemade version works perfectly for totchos. It’s creamy, smooth, and comes together in about 10 minutes.

You’ll need:

  • 8 oz white American cheese, sliced or cubed
  • ¼ cup milk (add more for a thinner consistency)
  • 1 teaspoon avocado oil
  • 1 (4 oz) can mild green chiles
  • Pinch of garlic powder and salt

How to make it:

  • Place the cheese, milk, and avocado oil in a small saucepan over low heat.
  • Heat until melted, stirring frequently.
  • Stir in the green chiles, garlic powder, and salt.
  • Add more milk if you want it thinner.

  • Bake the tater tots: Preheat the oven to 425°F. Line a large sheet pan with parchment paper and spread the tater tots in a single layer. Bake for 20–25 minutes, or until golden and crispy. Season lightly with salt when they come out of the oven.
  • Cook the taco beef: While the tots bake, add the ground beef to a large sauté pan set over medium heat. Cook, breaking it up very finely with a spatula.
    Stir in the taco seasoning, tomato paste, and water. Simmer for a few minutes until the cooked ground beef is well coated.

  • Warm the cheese dip: Add the cheese dip and milk to a microwave safe bowl. Microwave for about 30 seconds, then stir until smooth and pourable. (skip this step if making fresh homemade cheese dip)
  • Assemble the totchos: Once the tots are crispy, evenly spoon the taco meat over the top. Sprinkle with the black beans and corn. Drizzle the warm cheese dip evenly over the beef mixture, then sprinkle with shredded cheese.
  • Melt & finish: Return the pan to the oven and bake just until the shredded cheese is melted, 3–5 minutes. Remove from the oven and finish with your favorite cold toppings.

Helpful Tips for the Best Totchos

  • Bake the tater tots fully before adding toppings so they stay nice and crispy
  • Drain the ground beef well to avoid greasy totchos
  • Add fresh toppings after baking so everything stays bright and fresh.
  • Serve immediately for best texture
  • If you’re tracking macros or WW points, create smaller “totcho pods” on the baking sheet instead of one big pile. This makes it easier to control portions and customize toppings for each serving.

    I inhaled this. I increased protein by making four servings of tots but the full serving of ground beef divided by four and all the black beans. So good. My husband took the fourth for lunch and Im jealous.
