Happy Thursday! It’s time for my next installment of… *drum roll* THURSDAY THOUGHTS! Just incase you are new around here and are wondering who the heck I am and why I’m writing about random stuff in a blog post. I’m Star (Hi!) and I like to talk ramble on and on and on, but it doesn’t always fit in with my recipe posts without making them 734 miles long. Sound good? Kinda? Okay.
Anyway, Today I’m gonna talk about…
One: Baby Christmas Pepper. Aweeee. I love these little reminders of how tiny and adorable she was. As I sit here and write, she’s yelling at me, telling me she’s sticky, and that she needs a wipe now. Pros and cons, my friends. Some stuff is easier at age 3 and some stuff is…. messy, sticky, and well, down right demanding. Also, how cute is that hat? My mom made it!
Two: Christmas cookies! So far we’ve gotten one big batch of Christmas cookies made. These Mini M&M cookies from Sally’s Baking Addiction are so fun to make with Pepper. I accidentally got regular colors of the tiny m&ms so I made Pepper sit and pick out all the red and green ones hoping that it would be enough, it wasn’t. I love this recipe so much and have made it for a couple years now, but I do use 1/4 cup less m&ms than the recipe calls for because they don’t hold together well with the amount that’s called for. It’s probably just me though and it’s just my opinion and y’all know what opinions are like… haha
Three: Salad Board! It’s like a charcuterie board, but not at all because let’s be real, I’m not that fancy. I do this every couple’a weeks for dinner because Eric and I love salads for dinner, but you know what’s the best salad? SALAD BAR SALAD because there are so many toppings! Every once and awhile I get out my big ol’ cutting board and I just pile on a bunch of yummy salad toppings until there isn’t anymore room. This board features Skinny Ranch, cherry tomatoes, broccoli, cucumber, celery, chopped grilled chicken, real bacon bits, banana peppers, sunflower seeds, corn, carrots, olives, and croutons. The only thing that’s missing is chopped green onions and crispy onions. Seriously. I call it the garbage salad or “everything but the kitchen sink” salad. It’s hands down my favorite way to eat a salad. I was positively going through withdrawals while romaine lettuce was busy poisoning people. I ate this salad three days ago so I think I’m in the clear. *cross my fingers n’ toes!*
Four: I decided on a book! It took me like 5 days to make a decision and I actually had about 10 that you all recommended to me on my last Thursday Thoughts post, but I made myself choose. I decided on one in Reese Witherspoon’s Book Club, “One Day in December” by Josie Silver because it’s December.. ha! The first sentence of the description was, “If you like rom-coms” and I was all “sign me up!” I need something light and fun to read right now. Also, In Reese we trust. Seriously. Have I ever told you that Sweet Home Alabama is one of my favorite movies. When I was younger I used to fall asleep watching it every night until I wore out the VHS. VH-WHAAAAT?
I should start a book club. I’m just kidding that’s a terrible idea.

Five: We down right stink at Elf on the Shelf. I mean we remember to move it and all (thank goodness for alarms), but the cute scenes like snow angels in flour and lil’ Hershey kiss poops? I wanna do it, but I haven’t had the extra time. BUT I’m gonna. I wrote it so now I have to. She does love waking up to find the lil gal in a random spot though. Last night it hung on the kitchen cabinet door. Clever, I know. Don’t need to tell me twice!
Six: NACHOS. Last night I made Eric drive us 63 miles to eat these Texas Sheet Pan Nachos. They might look like a pile of mess, but lawdy.. I can’t handle how good they are! It’s a huge pile of freshly made nacho chips smothered in honey roasted corn (HELLO), shredded cheddar, from scratch queso, black beans, grilled chicken, tomatoes, cilantro, and wait for it.. BBQ sauce. And they are a dream. And I want to make something like this with a skinnyish twist for this ol’ blog, but man alive- nachos have so many components, you know? And they are all so crucial to making a seriously good plate of nachos. Tell me folks, would you want a sheet pan nacho recipe that was easy, but kinda took a while to make and maybe, kinda, sorta took some extra dishes, but they just so happened to be the best dang nachos this side of the Mississippi!?
Side note: I feel like you might be like, nachos….? cookies….? Do you eat well at all? The answer is yes, I really do eat well most of the time, but I am having an off week and you know what? Real life is sometimes cookies and nachos and I’m not ashamed of that.
Seven: CHRISTMAS IS IN LIKE 12 DAYS. I HAVE TO GO BYE.

agreed! The funny part is I had been cooking and testing new delicious and much healthier recipes all day, but I didn’t feel like eating anything or washing any more dishes. I just needed nachos in my life so badly!
