Ingredients you need for Street Corn Chicken Bowls

For the Chicken:
- Boneless Skinless Chicken Breast: Use chicken breasts for a lean, high-protein base. Boneless skinless chicken thighs or tenderloins work just as well if you prefer something extra juicy.
- Spices: A simple but flavorful blend of smoked paprika, oregano, chili powder, and garlic powder gives the chicken that warm, smoky street corn-y vibe without needing tons of ingredients.
- Salt + Pepper
- Olive Oil: Helps the spices stick to the chicken and gives you that delicious golden sear.
- Fresh Lime: A squeeze of lime brightens the whole bowl
For the Cilantro Lime Rice:
- Jasmine Rice: For these Street Corn Chicken Rice Bowls, I use jasmine rice because it cooks up fluffy and tender. . If you follow my rice cooking method, you’ll need to use jasmine rice as well since different varieties (like basmati, brown rice, or long-grain white) require different liquid ratios and cook times.
- Cilantro: If you’re one of those “cilantro tastes like soap” people, feel free to skip it. The bowls will still be super flavorful without it.
- Fresh Lime
For the Street Corn Topping:
- Corn: Frozen corn is super convenient. But if you ever get the chance to use freshly charred sweet corn right off a cob during sweet corn season… wow. It takes the flavor to a whole new level. Either option will give you that signature street corn taste.
- Cotija Cheese: Cotija is a salty, crumbly Mexican cheese that’s traditionally used in classic elote (Mexican street corn). If you can’t find cotija, finely grated Parmesan or queso fresco make great substitutes and still keep the flavor profile on track.
- Sour Cream: Adds creaminess to the street corn topping without making it too heavy. You can use regular or light.
- Mayonnaise: Use light or full fat mayo here. I typically use light mayo because it keeps things a little lighter and the taste is still spot on.
- Chili Powder: This gives the street corn its warm, smoky flavor. Tajin is also fantastic if you love that chili lime kick.
- Hot Sauce: Totally optional! I usually drizzle hot sauce over individual servings so little ones can keep their bowls mild.
- Lime: A squeeze of fresh lime at the end ties everything together and brightens all the flavors in your street corn chicken rice bowls.

Prepare the Cilantro Lime Rice

Make Mexican Street Corn
- Heat the corn in a small pan on the stove over medium heat or in a microwave safe bowl in the microwave.
- Stir in mayo, sour cream, cotija, lime juice, chili powder, salt + pepper. Add in hot sauce if desired.

Assemble Your Street Corn Chicken Rice Bowls
Start with a warm base of fluffy rice. Add your seasoned, cooked chicken on top, then top with your creamy street corn. Finish it off with all your favorite toppings!
Toppings
We love a bowl situation with lots of yummy toppings. Some might even argue it’s actually the best part. I’ve compiled a short list of all the goodies you can add, but keep in mind, you can also totally just stick to the base recipe.
- sliced onions
- romaine
- extra cilantro
- pico de gallo (or just some chopped up tomatoes)
- avocado
- sliced jalapeños (if you want some extra heat)
- tortilla chips
- lime wedges
- salsa chimichurri

Storage & Reheating Instructions
These make incredible meal prep chicken bowls because the chicken, corn, and rice all hold up beautifully in the fridge.
Storage: Store your Street Corn Chicken Rice Bowls in airtight containers for 3–4 days in the fridge. For the best texture, keep toppings like avocado, lime wedges, pico, and lettuce separate until you’re ready to eat. The street corn mix, rice, and chicken both hold up really well, making this a great meal prep option.
Reheating:
To keep the rice fluffy, place your portion in a microwave safe bowl and set a small ice cube on top of the rice (this helps the rice heat best). Microwave for 1 minute, then continue in 30-second intervals until heated through.
If you prefer not to microwave chicken (totally understandable!), reheat the chicken separately in the air fryer at 360°F for 4–5 minutes. It warms through quickly and even gets a little crispy on the edges again.
Helpful Tips
- Don’t Crowd the Chicken: Make sure to give the chicken plenty of space in the pan. If the pan is overcrowded, the chicken will steam instead of sear. That means that you’ll miss out on the golden brown crusty bits. Browning = major flavor, so cook in batches if needed.
- Check Your Pan + Lid (Super Important for the Rice!): When cooking the rice, make sure you’re using a pot with a tight-fitting lid that has zero holes. If steam escapes, the rice won’t cook properly and may turn out underdone. If your lid does have a steam hole, just plug it with a tiny piece of aluminum foil. This keeps the moisture where it belongs so the rice cooks perfectly every time.
- Fresh Lime: Fresh lime juice really brightens the entire bowl and pulls together all those street corn flavors.
- If your lime feels hard or not very juicy, pop it in the microwave for about 10 seconds. When you take it out, gently roll it on the countertop with your palm. The gentle warming and rolling help release more juice so you get every last drop.

If you need a quick, flavorful dinner or meal-prep recipe, these Street Corn Chicken Rice Bowls check all the boxes: easy, healthy, protein-filled, and packed with classic delicious Mexican street corn flavor. Add them to your weekly rotation, you’ll be obsessed.

Delicious, fast and easy! Whole family enjoyed this meal and will definitely be making on repeat!
Yess!! So happy you enjoyed
This recipe is amazing!! The only change we made to this recipe was we used 1/2 fire roasted corn and 1/2 sweet corn and used a rice medley. Even my autistic grandson gobbled down 2 bowls of thisWe’re also considering a couple other changes to this recipe, but @theskinnyishdish did an anxiety job with this recipe.
So glad you and your family enjoyed the street corn chicken bowls, Joyce! I appreciate you coming by and letting me know how it went. I love fire roasted corn, that’s such a great addition!
I LOVE street corn and I love that I can now make it a meal!! This was so tasty and was a breeze to make. I’ll be honest that I’m not familiar with jasmine rice and I think I prepared it wrong (I did not plug the vents in my pot) but was able to add some extra water and save it from being totally undercooked (it ended up being a little sticky, but that’s my bad – still delicious!). The chicken was super tasty too. I thought this was a nice summery meal and will definitely be making again!
Absolutely delicious!!!
Made these for dinner and my husband and I both loved them! We were excited to have leftovers later in the week and everything heated up perfectly. I’ve already made the elotes again on their own to serve with another meal – they were so good!
I’ve made lots of your recipes and loved them, but this might be our family favorite. I made this for the first time last night and everyone loved it so much they asked to have this meal again tonight. Thank you for another delicious recipe! Thankful I’m on your mailing list because that’s where I found this recipe first.
Hi Kylie!! Thank you for such a kind comment on these street corn chicken rice bowls!! These have quickly become one of my favorite thing to make lately. I’m so glad everyone enjoyed them and thanks for subscribing to the email listtoo! =)
can i use plain greek yogurt for mayo
You can use plain greek yogurt for a replacement, but to me it doesn’t have that classic street corn taste without a bit of mayo. If you love the taste of greek yogurt and want to replace, you absolutely can =)
Excellent fresh and leftover for meal prep! So glad to have you back creating recipes! 🙂
