Over the last year, Taco Rice has quietly become one of those “I can always count” dinners in our house. Life has been a blur of newborn-turned-toddler chaos, postpartum brain, and playing full-time chauffeur to a 10-year-old who somehow has dance, softball, and a social life that does. Not. Stop.

By the time we finally tumble through the front door at night, I’m usually running on fumes… and the idea of making a big, complicated meal (or cleaning one up) is just not happening.

That’s why I’ve fallen in love with this one pot Taco Rice. It’s simple, flavorful, healthy-ish, and doesn’t leave me staring at a mountain of dishes when all I really want is to sit down for five minutes.

This recipe was actually inspired by my Beef and Taco Rice Casserole and Pollo Loco recipe. I love the casserole, but needed something on the stove top to go faster! It has the same cozy, easy dinner energy as my Homemade Hamburger Helper too, which is another one pan favorite when I need something creamy, filling, and family-approved. Everything cooks together in one pan, the ingredients are easy and budget-friendly, and most importantly, IT’S GOOD! It’s the kind of weeknight dinner that makes you breathe a tiny sigh of relief the moment you remember it exists! You’re gonna love it!

Ingredients

  • Ground beef, turkey, or even ground chicken will work
  • Taco seasoning (homemade or store-bought)
  • Long-grain rice (white or jasmine work great)
  • Beef or chicken broth (water will work, but less flavorful)
  • Corn (frozen, fresh, or even canned will do)
  • Black Beans
  • Salsa (tomato sauce or hotel will work in a pinch)
  • Salt & pepper, to taste 
  • Favorite Toppings: Avocado, cheese, sour cream,. Lettuce, tomatoes, onions

Quick Homemade Taco Seasoning (optional)

  • 2 tsp chili powder 
  • 2 tsp cumin
  • 1 tsp onion powder
  • 1 tsp kosher salt 
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/8 tsp cayenne pepper more or less depending on spice level preference 

How To Make Easy Taco Rice

Step by step cooking process for taco rice: ground beef browning in a skillet in step 1, then seasoned with taco seasoning in step 2.
  1. In a large skillet or Dutch oven, brown the ground meat, breaking it apart with a spatula as it cooks. Season lightly with salt and pepper.
  2. Stir in the taco seasoning and let it coat the meat for about 30 seconds to wake up the flavors.
  3. Add the rice, salsa, black beans, corn, and broth. Stir everything together until well combined.
  4. Bring the mixture to a gentle boil, then cover with a tight fitting lid and reduce the heat to a simmer. Cook for about 20 minutes, giving it a quick stir halfway through. When the rice is tender and most of the liquid has been absorbed, remove the pot from the heat and let it sit, covered, for about 5 minutes so the rice becomes extra fluffy. Salt to taste.
  5. Serve warm with your favorite toppings like shredded cheese, crushed tortilla chips, avocado, sour cream, lettuce, tomatoes, cilantro, or lime.
    Note: Make sure your lid fits tightly and doesn’t have a vent hole. If it does, cover the vent with a small piece of foil so the rice steams properly.

  • Swap the tomatoes: Use Rotel (tomatoes with green chiles) or tomato sauce if you don’t have salsa on hand.
  • Make it spicy: Add jalapeños, crushed red pepper, or a spoonful of chipotle in adobo for extra heat.
  • Make it meatless: Skip the meat and use 3–4 cans of beans for a hearty, plant-based version.
  • Extra cheesy: Stir in queso or shredded Monterey Jack at the end for a super creamy, cheesy taco rice situation.
  • Make it extra protein heavy: Use bone broth instead of regular broth, add an extra can of black beans, stir in a cup of low-fat cottage cheese at the end, and top with Greek yogurt instead of sour cream.

Storage & Reheating Instructions

Taco Rice leftovers are *chefs kiss*, even better the next day!

  • Fridge: 4–5 days in an airtight container
  • Freezer: store in freezer safe container up to 3 months (best to thaw before reheating)
  • Reheat: microwave with a splash of water or ice cube to help fluff up the rice for about a minute then 30 second intervals until heated through.

Helpful Tips

  • Use a tight fitting lid to your pot! If there happens to be a vent hole, stuff a piece of aluminum foil in it. If you let too much steam escape while the rice is cooking it will not cook properly and you’ll more than likely have crunchy rice that takes FOREVER to cook.
  • Don’t rush the simmer– Keep it at a gentle bubble and resist lifting the lid too much. this helps the rice cook evenly and absorb all the sauce-y taco-y goodness.
  • Use broth, not water– Chicken or beef broth add more flavor. Use bone broth for more protein AND flavor.
  • Let it rest before serving– Just 5 minutes off the heat with the lid still on makes the rice fluffier and helps everything thicken into the perfect consistency.
  • Adjust the heat level easily– Mild salsa for kids, chipotle, jalapeños, or hot sauce for spice lovers.

One Pot Taco Rice

Ingredients

  • 1 lb lean ground beef (ground turkey or chicken works too)
  • 1 packet taco seasoning (or homemade blend in notes)
  • 1 cup uncooked jasmine rice
  • 1 cup corn (frozen, canned, or fresh)
  • 1 15.5 oz can black beans drained, no need to rinse
  • 1.5 cups salsa
  • 2 cups low sodium beef broth (any broth or water will work, broth is more flavorful)

Instructions

  • In a large Dutch oven or a deep skillet with a tight-fitting lid, cook the ground beef, breaking it up with a spatula as it browns. Season with salt and pepper.
  • Add the taco seasoning to the browned beef and stir for about 30 seconds to toast the spices and bring out their flavor.
  • Add the black beans, corn, salsa, rice, and beef broth. Stir everything together until combined.
  • Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover with a tight-fitting lid and cook for 15-20 minutes (stirring once about halfway through). After 15 minutes, check to see if most of the liquid has been absorbed. If it has, take a small bite from the center to make sure the rice is tender. If not, continue cooking for an additional 5 minutes.
    Note: If your lid has a vent hole, steam will escape quickly and may prevent the rice from cooking properly. To fix this, place a small piece of aluminum foil over the vent to block the steam.
  • When the rice is fully cooked, gently fluff it with a rubber spatula or spoon. Remove the pot from the heat and let it rest, covered, for about 5 minutes. This quick resting period helps the rice get extra fluffy and allows everything to set up nicely.
  • Serve and top with whatever toppings you love! Sour cream, avocado, taco sauce, diced onions, lettuce, crushed up tortilla chips are all great additions.

    This recipe was so easy to follow! And it turned out absolutely delicious! I didn’t have any salsa on hand and used rotel and I think it subbed perfectly. Can’t wait to make it again but first I have so many leftovers! Lol

  5. I took your recipe for main ingredients and made my own.
    Hamburger and breakfast sausage, celery, onion, garlic, green peppers and fire roasted poblano..browned. Added one packet of taco bell taco seasoning, 1/2 can fired roasted tomatoes with green chilies with juice, one can of southern mexicorn half drained, 3/4 can of seasoned black beans drained, 1tsp cumin, 2 to 3 cups of cooked rice and 1/4 c of water. I’ll top my bowl with shredded Monterey jack cheese and sour cream. Yum !!

    Made this last night for dinner and everyone liked it… definitely will make this again.
    The only change I made was i used a pound of frozen cooked taco meat defrosted and added all other ingredients. Very yummy….thanks for another winner Star!

    So good! I substituted the rice for microwaveable rice and did not add any broth since the rice was already cooked. Heated it all together for 10 minutes and it turned out great! Will definitely make it again!

    Love this new recipe! I made it a couple weeks ago for Taco Tues and thought it was great. It made so much so I froze the leftovers because I had a bunch of plans and didn’t want it to go to waste. I defrosted it this week and have eaten it every day – dare I say it’s even better? Great option for dinner and meal prep! I took the bone broth idea and added cheese and avocado on top. Very delish and kept me full for a while.
