creamy homemade hamburger helper made with ground beef, pasta shells, and cheesy sauce, garnished with fresh parsley in a skillet.

Homemade Hamburger Helper is one of those easy weeknight dinners that keeps landing back on our menu, planned or not. I’ve got a toddler, a ten-year-old, a hungry husband, and me, so finding something everyone will actually eat without turning dinner into an Olympic sport is always the goal.

This one is creamy, cozy, made in one pot, and ready in under 25 minutes. The shortcuts that make it work are brown gravy mix and cooking the pasta right in the sauce, but I included a homemade brown gravy mix option too if you’d rather skip the packet.

If easy, cozy dinners like this are your love language too, you’ll also want to try my One Pot Bacon Cheeseburger Pasta, One Pot Taco Rice, and Chicken Broccoli Rice Casserole. They’re all simple, family friendly dinners that make busy weeknights feel a little less chaotic.

Why I can’t stop making this

  • One pot: Everything cooks together, even the pasta.
  • Ready fast: Dinner is done in about 25 minutes.
  • Healthier comfort food: Creamy, cheesy, cozy, and made with simple ingredients.
  • Family-approved: Toddler, kid, husband, and mom approved.
  • Easy to customize: Add veggies, swap the pasta, or use ground turkey.
  • Better than the box: All the nostalgic flavor, but so much tastier and better for you too!

Key Ingredients

Ingredients for homemade hamburger helper laid out on a wooden surface — ground beef, noodles, cheese, beef broth, tomato paste, brown gravy mix, and spices.
  • Ground beef: lean ground beef (93/7) for a lighter version, but you can easily swap in ground turkey, ground chicken, or ground pork.
  • Beef broth: Regular or low-sodium both work. For extra flavor and protein, try using beef bone broth.
  • Tomato paste: Adds a rich, deep flavor and gives the sauce that classic “from the box” color and taste, but without the box.
  • Brown gravy mix: This is the shortcut that gives the sauce its cozy, savory flavor. I like Kinder’s or Simply Organic, but I also included a homemade brown gravy mix option in the notes if you want to skip the packet.
  • Half and half: Keeps the sauce creamy and rich without making it too heavy. You can swap in milk for a lighter option, blended cottage cheese for a protein boost, or sour cream for an even creamier finish.
  • Dried minced onion: My favorite shortcut! It gives great flavor without chopping an onion and crying over your cutting board. You can find this in any grocery store spice section.
  • Shredded cheese: Use what you love, but sharp cheddar cheese gives the best flavor.
  • Noodles: I use Goodles Curveball pasta for extra fiber and protein. My family can’t tell the difference! Elbows, shells, rotini, or another short pasta will work too. Different pasta shapes may need an extra splash of broth if they take longer to cook.

Super Easy Homemade Brown Gravy Mix

If you’d rather skip the packet, this quick homemade brown gravy mix works perfectly in this Hamburger Helper recipe:

  • 3 tablespoons all-purpose flour
  • 2 teaspoons beef bouillon powder
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder

Stir everything together in a small bowl then add to the recipe when necessary.

Easy Variations

Once you’ve made this Homemade Hamburger Helper a time or two, it’s easy to switch up the flavor. Here are a few simple ways to give this one pan dinner a totally different vibe.

  • Chili Cheese Hamburger Helper: Add 1 tablespoon chili powder with the seasonings, then stir in a can of pinto beans with the noodles and broth. For a full cozy bowl situation, my Best Classic Beef Chili is another family favorite.
  • Taco Hamburger Helper: Swap the seasonings and gravy mix for taco seasoning. Stir in Monterey Jack cheese and a spoonful of sour cream at the end, then top with cilantro, hot sauce, and diced avocado. If you already have my Beef and Bean Taco Meat made, you could use that as a shortcut here too.
  • Veggie-Packed Hamburger Helper: Add grated zucchini or diced bell peppers while browning the beef. Stir in fresh spinach at the end with the half and half and cheese.
  • Beef Stroganoff Hamburger Helper: Add finely diced mushrooms while the beef cooks, then stir in ½ cup sour cream at the end for a creamy stroganoff-style version.
  • Cheeseburger Hamburger Helper: Add ketchup, mustard, and a little dill relish after the seasonings. Top with crispy bacon if you’re feeling extra fun.

Helpful Tips

1. Use a large skillet or Dutch oven: The pasta needs room to cook right in the sauce.

2. Keep it at a gentle simmer: If the heat is too high, the liquid can reduce before the pasta is tender.

3. Stir every few minutes: This keeps the pasta from sticking and helps everything cook evenly.

4. Add the dairy at the end: Stir in the half and half and cheese after the pasta is cooked so the sauce stays creamy.

5. Let it sit for a few minutes: The sauce thickens as it cools, so don’t panic if it looks a little loose at first.

6. Different pasta shapes may need a little more cook time. Add an extra splash of broth if the pasta needs longer to soften.

What to serve with Hamburger Helper?

Since this Homemade Hamburger Helper is already rich, creamy, and filling, I usually keep the sides super simple. A quick veggie or side salad is perfect for rounding out the meal without making dinner more complicated than it needs to be.

Storage and Reheating

Store: Keep leftover Homemade Hamburger Helper in an airtight container in the refrigerator for up to 4 days.

Reheat: Warm leftovers in the microwave in 30 second increments until warmed through or in a skillet over low heat. Add a little broth, milk, or half and half if needed to loosen the sauce.

Freeze: I don’t usually recommend freezing creamy pasta dishes because the texture can change, but you can freeze it in a pinch. Thaw overnight in the fridge and reheat gently with a splash of liquid.
