Happy National Grilled Cheese Day!

I saw that today was ‘National Grilled Cheese Day’, and the wheels started turning. Of course I had to participate! by now it’s no secret that I love cheese. I don’t think I’ve created a single recipe without it.

Someday I will though. I’ll go ahead and challenge myself to it.

I’m sorry, but it really does make everything taste better!

I went almost 9 months without eating cheese because I had terrible gallbladder problems during my pregnancy. I’d say it was the worst 9 months of my life, but my body was busy making the best thing that has ever happened to me. So I won’t, but it was tough. I just make up for lost time now. Haha!

Last weekend, while out of town visiting my Grandma, I made my Biscuits N’ Gravy Bake and a delicious Strawberry Pecan Fruit Salad. I asked my grandma why she wasn’t having any of the fruit salad, and she replied, “I’ll have some, it’s just fruit, right?” and my mom responded with, “Star never JUST does anything. There’s always some sort of twist or ultimate version” to which I replied, “YEP!” and we all enjoyed our breakfast, four generations of family women, together. 🙂

ULTIMATE BACON GRILLED CHEESE!

First things first. Gather up these ingredients-

Barely half a TBS of Yogurt Spread/Light Butter

2 Slices Low Calorie/Low Point Wheat Bread (I used Trader Joe’s Sprouted Wheat)

4 TBS of some light or nonfat shredded cheddar and/or mozzarella (I used both)

3 slices fully cooked bacon (heated up and chopped)

2 TBS Hellman’s Light Mayonnaise (If you’re a miracle whip person, I’m sure it would work… but why are you a miracle whip person?!)

1 TBS dried minced/chopped onion

1 TSP Worcestersire Sauce (If you don’t have this, it’s fine but it really does add some good flavor!)

Chives (This is totally optional as I just wanted some color)

Ultimate Grilled Cheese

Add all the ingredients into a small bowl.

 

Mix up all the ingredients and let set for 1-2 minutes to let the dried onions absorb a little.

Butter your bread ever so slightly just enough to say you did.

Pile on the cheese mixture and grill in a lightly sprayed skillet until it’s golden brown on each side and the cheese looks melted.

And you’re done!

And you have the best grilled cheese sandwich this side of the Mississippi.

  3. This one would be a real man pleaser. I think I need it with a big bowl of tomato soup and a salad of fresh greens. I need to catch up on all the wonderful things I want to try.Your good looks amazing.
    I can’t even imagine going nine months without cheese. I went 3 months without chocolate during my first trimester with my daughter. Miserable experiement. Never again. I did gain around sixtyish pounds, so obviously I found something else to eat instead. Ha ha! I did take the weight off…and then got pregnant with my son…gained about 40ish pounds…took that off… gained some, lost some…same old pattern, with or without babies. Ha!
