- 1 tsp kosher salt
- 1/2 tsp freshly cracked pepper

- 4 slices mozzarella cheese (shredded or fresh mozzarella works well too)
- 16 cherry tomatoes, cut in half
- 3 tbsp pesto (store bought in the refrigerated section is what i use, but fresh or shelf table works)
- lemon, freshly grated parm (optional to serve with the dish)
Instructions
- Prep the chicken: Cut the chicken into 4 even portions. Place the chicken between plastic wrap or inside a zip-lock bag and gently pound with the flat side of a meat mallet until each piece is an even thickness. Dry the chicken with a paper towel so the seasoning sticks well. (see notes)
- Season the chicken: Add chicken to a bowl. Add garlic powder, onion powder, Italian seasoning, olive oil and salt/pepper, and mix really well until the chicken is fully coated.
- Cook the chicken: Heat a large skillet (preferably 12 inch) over medium heat and spray well with avocado oil spray. Add the chicken in a single layer, not crowding each other. Working in batches if needed.Cook undisturbed for 5 to 6 minutes to develop a golden sear. Flip and cook another 4 to 5 minutes, until the chicken is almost cooked through.
- Add toppings: Top each piece of chicken with mozzarella and lightly spread pesto evenly on each piece of chicken.Add the halved cherry tomatoes to the skillet and cook for 1 to 2 minutes until slightly softened.
