Crockpot Creamy White Chicken Chili

What’s for dinner this week? Well, not too sound pushy, but it should probably be Crockpot Creamy White Chicken Chili because it’s incredible and one of the easiest recipes I’ve ever made. You literally just toss a bunch of stuff in the crockpot wait several hours, throw a couple more things in, and then, you are golden. You probably have most of these ingredients on hand already. I’m obsessed with this recipe. I’ve made it every single week since I started working on the recipe for this here blog, and I cannot get tired of it.

I know you’re probably wondering, “Star, is everything going to have beans in it now?” The answer is No. Haha! But, since the new WW Freestyle program makes beans zero points and I’ve only liked beans for about six months now. It’s really opened up a whole new world for me, y’all! I know it’s not that exciting for most people, but for me it is. I’m sitting here eating a delicious chili with beans in it and I am obsessed. Who am I?! Me one year ago would be scrunching my nose up and saying, “No way!” I’m pretty proud of myself for giving them another chance. I stick to my guns when I don’t like certain foods. I’m pretty stubborn about it, to be honest. I wouldn’t consider myself picky in the least, but I like what I like. I still don’t like mushrooms so don’t worry, I’m still the same person.

What’s been going on this week for us? Well, I’ve been fighting a stupid cold. It’s been pretty persistent. I’ve been chugging all the water and eating approximately 300 Cara Cara oranges daily to combat this thing. I’ve kept it at bay, but it’s still here just enough to annoy me. Oh, and then Eric caught this persistent lil’ baby cold and well, we all know what happens when a man gets a cold. He’s practically dying, y’all. Send prayers. (He’s not. He’s FINE.)  This chili has been on the menu daily because not only is it chili and we love chili and/or soup when we don’t feel well, but it’s packed with so much dang flavor that we can actually still taste it! I truly think that’s the most annoying part about a cold. You just can’t taste a thing! Which also makes my job hard. Womp womp.. I haven’t been able to really work on any new recipes this week because I can’t taste them enough. Oh well, it’ll be gone soon!

Another really fun thing that happened this past week is that I went LIVE on Instagram with a fellow blogger and friend! Amy over at Beautifully Broken Journey. She’s such an inspiring woman and I just really like her. You will too! Go check out her blog.  I never go live because truthfully, I feel that I do better behind the camera. It was fun and we got to chat together, talk about our weight loss journey’s, different tips & tricks, and talked to so many people! I was dreading it in ways, but I’m really glad I stepped out of my comfort zone and did it. I think it’s important to challenge myself so that things don’t become stagnant, y’know? Anyway, I’ve been thinking that maybe I’ll do it again sometime and with better lighting (gosh, I had no idea the lighting was so bad. If you saw it, I’m so sorry. haha!) I’ll be sure to let y’all know!

Anyway, enough talk. Let’s get in the kitchen because I’m hungry and you’re going to be hungry after you see this.

Throw some spices together. You’ll need 2 tsp cumin, 2 tsp garlic powder, 2 tsp onion powder, 2 tsp chili powder, 1 tsp kosher salt, 1 tsp pepper, 1 tsp Lawry’s Seasoned Salt, and 1/4 tsp cayenne pepper. More or less depending on your level of spice preference. I prefer a bit more especially with this cold I’ve got, but 1/4 tsp is a perfect balance of heat to me!

Throw a couple pounds of raw chicken breast in a slow cooker.

Add 2 cans of Great Northern Beans, 2 cans diced mild green chiles, 1 and 1/2 cups frozen corn, and the spices!

Then add 1 3/4 cups chicken broth. (low sodium if it’s available!)

Stir it up, cover it, set it to low, and forget about it for several hours! Go to work, go get your hair done, clean your house, take your kids to soccer practice, whatever ya want! Dinner will be ready later! We’ve got it covered.

Remove the chicken and shred it.

I just throw it in a bowl and quickly shred with two forks. You can also use a mixer!

Add it back into the slow cooker and stir in with everything else.

Grab 4 ounces of light cream cheese.

Throw it in the slow cooker and also pour a half cup of half and half with it. Stir it up. Pop the cover back on and set your slow cooker to high and cook for another 30 minutes. D

aaaaaand then it’s done. White Chicken Chili for Prez. 

and it’s delicious.  (squeeze some lime on it to make it even beeetttaaa)

so stupid good.

You can even take this White Chicken Chili to the next level by adding tortilla strips, shredded cheese, cilantro, green onions, but you surely don’t have to. It’s delicious by itself.

But, I’m the kinda gal that likes to go big or go home with my food.

I even added some freshly chopped tomatoes because why not at this point?

 Oh my gosh, Did I mention this White Chicken Chili is delicious!? Make it right now, friends!

Crockpot Creamy White Chicken Chili

A slow cooked white chicken chili fully loaded with flavor and finished off with cream cheese and a splash of half and half to make it nice and creamy.

Ingredients

  • 1-½ lbs chicken breast, raw
  • 2 15.5 ounce Great Northen Beans (about 3 cups) drained, but not rinsed
  • 2 4 ounce cans cans diced mild green chiles
  • 1-½ cups corn kernels (frozen or canned)
  • 1-¾ cups chicken broth low sodium, if available
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp Lawry’s Seasoned Salt
  • 1 tsp pepper
  • ¼ tsp cayenne pepper more or less depending on level of spice preference
  • 1/2 cup half and half
  • 4 oz light cream cheese

Optional toppings

  • tortilla strips
  • reduced fat shredded cheese
  • chopped green onions
  • chopped cilantro
  • diced tomatoes
  • a squeeze of 1/4 of a lime

Instructions

  • In a slow cooker add chicken breast, beans, green chiles, corn, spices, and chicken broth. Cover and cook on low for 7-8 hours or high for 5 hours. 
    **Be sure not to add cream cheese or half and half in the beginning.**
  • Remove chicken and shred. Stir back into the chili.
    Stir in half and half and light cream cheese. Cook on high for 30 minutes. 
  • Top with tortilla strips, cheese, green onions, cilantro, tomatoes, and/or a squeeze of lime, if desired. Enjoy!

    I absolutely love “dump and go” recipes like this when I’m feeling lazy but need to cook a nutritious meal. This was my first meal prep of the New Year and it was a winner!     1. Hi Jenna! I have always been weird about using frozen meat in the crockpot, but have seen plenty of people use it with success- you may need to cook for an extra hour just make sure it’s cooked through when shredding.

  10. This looks amazing thank you for sharing- in Australia I don’t think we have cans of mild green chilies. Could you recommend a sub? Would it be similar to sautéd green capsicum??

    1. Hi Eden! I’m so sorry you can’t find those there. While green peppers will work just fine, they won’t have the same flavor profile as green chiles do. I’m not sure if you have any of these peppers, but fresh diced (and sautéed) jalapeños or poblanos would add a nice taste. Also, we had a shortage of green chiles a couple years back and lots of people including me just left them out, it changes the flavor ever so slightly when they’re left out, but its still super good!   14. Can I use 2% milk instead of half and half? I don’t usually buy it so never have any on hand already, but I’m not sure if it’ll be a good substitute for this. I use it for mac’n’cheese, but most of the thickening is done by the roux there.

    Thank you Star! I can’t count how many times I’ve made this recipe! It’s always on rotation as soon as the weather gets chilly enough for the slow cooker! Tastes great on its own, but also over white rice, or even as a “dip” for chips.

    Delish! I am sorta picky when it comes to textures. So, I like more broth versus ingredients in my soups. My husband is opposite! Haha! Next time, I’ll add more broth to this recipe – only for my preference! I also didn’t add all the chicken back into it. It was too much for me. So now I have extra chicken that I can use in a yummy burrito bowl! This recipe is absolutely delicious and worth making!! The toppings are soooo perfect on top!! This would also be amazing over a baked potato.

    Best soup ever! You need to make this when it is cold outside and you need warmed up!
    You almost feel like your cheating it is so good!

    1. I live this soup but the cream cheese never melts, it makes the soup look in-appetizing. Any suggestions or can I just omit it? I have tried regular and low fat. I also cut it into chunks before putting it in. I have also tried cooking it longer.

      1. You can try omitting it or you can try cutting into smaller chunks and letting it heat a bit longer and stir it well. I don’t have difficulties with this, but I have had a few readers comment and say they’ve had the issue. I’m sorry! I’m not sure if some crockpots aren’t getting as warm as others. It’s possible.

    One of my favorite recipes from your site! I’ve used the called-for cans of green chiles, but I’ve also substituted a cut-up green pepper a few times. Both ways taste great. I usually throw in some grape tomatoes (sliced in half) and crushed tortilla chips on top before serving.

  47. This is unreal. Probably the easiest thing I’ve ever made, AND it’s insanely delicious – and I don’t even typically like chili. Followed the recipe exactly, then topped with some southwest style tortilla strips and reduced fat shredded cheddar.     This white chicken chili is seriously just the best, hands down. Made it for the first time last night (not sure why I waited so long?) and the whole pot was gone within 30 minutes! It has the perfect amount of spice and is so flavorful. I did one 4 oz. can of diced green chilies and one can of rotel with green chilies just because I like the tomatoes in there and it was a hit.     I made this tonight and really liked the flavor. I only got 5 servings, not 8. I had read most of the comments before making it and I’m surprised that no one mentioned that or that it needed probably double the broth.. If I had doubled the broth I might have stretched it to get to the 8 servings instead of the 5 servings I got.
    I used exactly 1 1/2 pounds of chicken breast. I didn’t change the recipe at all, cooked on low the whole time.
    Anyway, it just surprised me that I got 3 servings less than the recipe said. But loved it and I will just add more broth next time.

    1. Hi Kathy! That is strange. This recipe has been made…. A LOT. By myself and tons of readers and I’ve never personally had that problem when measuring out for meal prep. I do know that with soup in general it can sometimes reduce liquid more and that can throw off servings, but never had that personally happen. However three servings off seems like a lot even with liquid reduction. I’m sorry I don’t have a better answer, but will pay extra close attention to servings next time I make and make sure its right. happy you enjoyed it!

      I made this recently and had the same exact problem! The only thing I can think of is the size of crockpot we used. I made this in my 6 quart crockpot and wonder if it was the issue. @OP what size crockpot are you using to make your recipe? Thank you!

      Hi Ava, Sorry for such a late reply, but I just now saw your comment. I did use a 6 quart crock pot when I made it. Have you tried the recipe again in a 4 quart? If so, did you end up with 8 servings this time? I haven’t tried it myself in a 4 quart yet. Maybe I will give that a try this week.

    I made this recipe once as a meal prep and had my parents try it. When I say they were obsessed it’s an understatement!! Whenever they have people over and talk about cooking they always mention this amazing chili I make and I of course send them over to this website.   59. I have this in the Slowcooker as we speak. I added chopped onions, red bell peppers , and chopped mushrooms. I haven’t seen anyone else comment that they did any additional veggies, but I felt it needed them. I’m on WW and like to load up on vegetables…hope it’s ok…

    Super duper delish. I did it pretty much exactly as written. At the end I topped w/ chopped white onion, cilantro, about 1 TBS of low fat shredded mozzarella and LF shredded Mexican cheese. And a squeeze of lime as suggested.
    To be honest the first bite, my BF and I thought “Oh it’s a bit salty.” I’m not sure why, b/c by a few bites in, it seemed perfect. I didn’t use low sodium broth, but I’d do it exactly the same next time b/c it was delish….and am sharing the recipe. This may be my favorite recipe of yours (and I’ve made and enjoyed quite a few.)

    I made this last week! I had leftovers and it was perfect bc it’s been pretty “chili” over here lol. It’s filling and warm and perfect for any season really.     Oh its so good and flavorful! We had leftover chicken that we had grilled and I threw those pieces in to cook down. Other than that I followed the recipe to the ‘T’! We topped it with sour cream, jalepenos, tortilla strips and lime. The entire family liked this!

    5+ stars is what I would rate this dish. I stumbled across Skinnyishdish about a year ago & it has become my GO TO website for WW AND family friendly meals. I tried making a similar dish from another WW friendly website & it just missed the mark. However, THIS recipe is pretty much on a bi-weekly rotation as my ENTIRE family loves this (hello to my fellow moms with very opinionated 4 yr. olds…). It is SUPER DUPER easy, minimal clean-up AND it doesn’t taste like a “weight watcher”/”light” meal. If you haven’t tried this recipe yet do yourself a favor and do it… I promise you won’t regret it!

    This is my fav white chicken chili recipe I have ever made. The seasoning is perfect. It’s a party for your tastebuds! I sub a can of Rotel for the green chiles, and only use corn if I feel like it. Still amazing! It’s currently in the crockpot again!!

    I have made the White Chicken Chili twice now. YUM!!!! I doubled the second batch. I have needed some variety in our menu. My daughter and I are doing WW so when @theshrinkingmomma recommended you I looked you up. We have also tried the Chicken Tamale Bake. Loved it!     This is the first recipe review I’ve done. But I had to write this because man is this Chicken Chili good and so easy. I cooked it on high for 5 hours and the chicken just fell apart. The seasoning was perfect. The only change I made was to add a little more chicken broth (3 cups instead of 1 3/4 cups) just because I like more broth. I topped it with reduced fat cheese, cilantro, tomato, tortilla strips and lime. Thank you for this great recipe!!! I’m looking forward to trying more of your recipes.

    This was SO GOOD! I don’t really like beans so I only added one can, but it was perfect. The entire batch was gone in two days between my husband and myself! We also don’t like ‘repeats’ and can’t usually eat the same thing multiple times in a row, but I COULD NOT get enough of this chili. The serving is huge and it is soo filling and comforting. I will make this all winter long.

I made it exactly as the recipe was written except I only used 1 can of green chiles because I could only find medium and I would normally buy mild.

    It’s 100 degrees in Southern CA today, and I’m still making this for dinner. We love it and it feeds us well for 3 days (2 adults). We like it with a little more broth, so I double everything EXCEPT the chicken, beans, green chiles, and corn. It’s perfect and freezes well, too! My husband says that when our daughter moves out one day, this will be the meal she requests when she visits home. Thank you for the recipe!!

    I made this a few weeks ago, I always double everything because my family is forever stopping by and I like to be prepared. I have been craving this since I ate the last bowl of leftovers. I am making it tomorrow and I seriously cannot wait to have it for a few more days. I have tried a few white chicken chili’s that were just flavorless, this one is phenomenal, no joke. I made some plain jasmine rice on the side because I only eat one meal a day and needed a little extra calories, but I did not garnish with cheese or sour cream like I normally would because the flavor is perfect and needs nothing additional. I would give this way more than 5 stars!

    I made this last night and loved it. The beans broke down a lot so next time I’ll add them during the last 30 minutes after I add the half & half and cream cheese. Adjusted the seasonings near the end. Such a good flavor. I will make this again!

    1. I haven’t doubled the recipe, but I think it should be just fine to double the ingredients. When its done you might need to adjust the seasonings a bit, but it should be really good. I’m so happy y’all enjoyed!

    1. Half & half is basically, half milk, half cream. So, you could use milk and heavy cream, half of each to make up the measurement of half & half. The chopped chilis are found with the International foods, here, in the taco section. If you don’t have that, you could use jalapeños, or other fresh chili peppers… but use less, they’ll make it spicier.

    1. I’d probably just mix all the ingredients together and cook on low for just a few hours vs a long cooking time since you don’t have to get the chicken cooked

  127. I make this pretty much bi-weekly and it is a definite favorite! Currently I have fat free half and half on hand. Do you think that would make is as creamy as it usually is if I used that instead of full fat? I hate to make any changes since it is one of our favorite meals!!

    1. Hi Melissa! I’m so happy you enjoy this recipe so much. I’ve seen plenty of people say they have used fat free half and half and still loved it! I’ve personally never tried it because I don’t keep the fat free on hand very often at all. I really don’t think it should loose too much of the cream factor because you still have the light cream cheese to help it along!

    1. for sure! shouldn’t make too much of a difference. Using heavy whipping cream and cream cheese might make it SUPER thick though, so I would just add a little at a time to get it to your liking.

  134. First anyone wondering about the instant pot:

    I cooked all the ingredients that would have went in the slow cooker before the half & half and cream cheese on manual for 20 minutes then did quick release . I shredded the chicken, added the cream cheese and half & half and put the instant pot on slow cook for 30 mins and covered it. It came out DELICIOUS!! Next time I think I might slightly reduce the chicken broth because it wasnt as thick as I wanted and I know the instant pot doesn’t reduce liquid like a slow cooker.

  136. How many servings does this make? I see that it says 11 cups and that a serving size was 1.5 cups. I got confused because there is nutritional information for 1 cup and not 1.5 cups like the serving size. I put the recipe in the WW recipe builder and got 3 points when I divided it to 6 servings.

  138. I successfully made this in the Instant Pot.

    Followed the directions, added everything to the Instant Pot, except half & half. Made sure there was liquid under chicken breasts. Placed cream cheese cut in cubes on top of mixture. I used frozen chicken so 30 minutes on high with quick release. I’d do 25 minutes if the chicken was thawed. Remove chicken to shred. Stir in half and half. Serve. 🙂

  139. Hi! I haven’t tried this recipe yet but I am dying to. I always double check for Weight Watchers Freestyle points in my app (nothing against you, I’ve just had recipes be incorrect) and my calculator is saying 5 points for 1 1/2 cups and not 2. Do you know why this might be?

    1. Are you using the nutritional info to calculate your points? If so, the nutritional information includes everything in the recipes like the beans, corn, and chicken all of which are zero points on weight watchers, but still have calories so I include them into the calorie information. I use the offical weight watchers recipe builder to calculate all of the recipes.

  140. I made this today and it was absolutely delicious. I did use already shredded chicken that I made a few weeks ago and had in the freezer but I just let it all cook together on low for a while. I also added a little more chicken broth because it seemed like it needed it and I don’t know if it’s because the chicken is already cooked and shredded and soaked up some of the chicken broth I had put in there. It was awesome and I cannot wait for leftovers tomorrow

    I had an almost full Costco rotisserie chicken in the fridge that I needed to use up. And (luckily) all the ingredients in my pantry for this chili.
    I made this dish once before, exactly as written, in the crockpot. It was super yummy but I was a smidge disappointed in how “watery” it turned out. Not so this time! I don’t know if it’s using pre-cooked chicken (not as many juices released) or what, but man oh man… this batch turned out SO good!

    So, for any others wondering… yes! You can absolutely make this with pre-cooked chicken!

    I pulled the chicken off the bird and left it in pretty big chunks. I also added an additional 1/4 cup broth and put it all in a pot on the stove, except the half & half and cream cheese, like Star says. I cooked it on super low, covered, for about 2.5 hours and then added the last 2 ingredients. Let that go for another 30min – 1 hour and really give it a good stir to break up any large hunks of chicken. And then good luck not eating the whole dang pot!

    Hi! I’m a new follower. Let me just say, this recipe is AWESOME! I made a couple of modifications to mine…I didn’t have half & half, so I just used a full block of the FF cream cheese. And I only had one can of green chilies. At the end, I added about half a packet of ranch dressing mix and OH EM GEE. It’s delicious!!! My husband had NO idea that this was “light.” 🙂 Thanks!!

    So i kinda missed the 1/2 and 1/2 part in the recipe when I was buying the ingredients so I used all 8 oz of my FF cream cheese. Not sure what it would have tasted like with the milk however this version was super yummy!!! Now to do the recipe builder and see how it changes the pts. I have the power cooker (insta pot’ish) and I did it on the Stew settings 10mins then let the steam out… threw my cream cheese in… put the lid back on set my timer to 5 mins and it was done! Topped with Fage 0% yogurt & cilantro. So freaking good. Thank you for another awesome recipe!!!!

  172. Any ideas why when i convert this recipe at myfitnesspal (by copying and pasting the url into the recipe thing), and adding 11 servings it says 409 calories….

    1. Did you double check the ingredients? I find when I do this at times it puts the wrong ingredients or measurements in.

    I substituted light sour cream with skilled milk for the half and half and used fat free creamed cheese. I didn’t have green chiles so i substituted chopped red, orange and yellow baby peppers. I also used shredded rotisserie chicken and cooked it in a stockpot on the stove. Turned out GREAT and I will know it will be better tomorrow. Thanks so much!

    Omg!!! This is excellent!! I made it with thighs since I had them on hand. Delish! I have tried several of your recipes… all have been a big hit!! Italian beef, bubble up bake, shredded chicken… all terrific! Thank you for sharing such deliciousness! As a family and mom who had lost 25lbs, I’m learning maintenance is tough… but your recipes make it easier!

    Thank you for this delicious recipe! We had it plain night 1 and 2, then on night 3 we drained it and made burritos dipped in a bit of Taco Bell chipotle sauce. Delicious and so filling!

  184. Hi Star – I can’t wait to try this! Exactly they type of meal we love!! Question, I saw you calculated the Freestyle points, but when I add it to my app it says 5 pts for 1 cup; you say 2 pts for 1.5 cups. Can you explain the difference to me? Thanks!!
