If you’re craving something delicious and cheesy, try these Chicken Cheesesteaks. They are better than takeout and will become your new weeknight obsession. Tender seasoned chicken, sauteed peppers and onions, and melty cheese all piled into a toasted hoagie roll. This is pure comfort food magic… without the greasy regret. This easy, healthy-ish chicken cheesesteak sandwich comes together fast in one pan. It tastes like a restaurant meal and it’s totally family approved.

There are two kinds of weeknight dinners. Some dinners feel like a chore. Others make you feel like you absolutely crushed life.
These Chicken Cheesesteaks fall into the second category.
Perfectly seasoned tender chicken, sautéed peppers and onions, melty cheese, and a toasted hoagie roll? It’s the kind of dinner that tastes like it came from your favorite sandwich shop. But it’s made in your own kitchen in less than 30 minutes. It is a whole LOT healthier than a classic Philly cheesesteak!
I sort of have a soft spot for cheesesteaks. When I was a teenager, I worked at the mall. I lived off greasy, cheesy chicken cheesesteaks more times than I’d like to admit. So making a lighter homemade version that still tastes like that “food court nostalgia” mall moment? So good.
If you’re craving somethin healthy-ish, cheesy, and totally family approved. This chicken cheesesteak recipe is about to become a regular in your rotation!!
If your family loves sandwich night, be sure to try my Slow Cooker Italian Beef sandwiches next. They’re piled with tender shredded beef and melted cheese!
Why You’ll Love These Chicken Cheesesteaks
- One pan = easy clean up
- Fast weeknight dinner ready in less than 30 minutes
- Tastes like takeout but this chicken version is lighter and homemade
- Easy to customize (spicy, extra veggies, different cheeses)

Ingredients You’ll Need
- Chicken tenderloins (boneless skinless chicken breast or thighs are fine- I use tenderloins because they stay SO tender which is ideal)
- Bell pepper (green, red, or yell works)
- Yellow onion
- Cornstarch
- Worcestershire sauce (adds that “cheesesteak flavor”)
- Extra-Virgin Olive oil
- Seasonings (salt, pepper, garlic powder, paprika, oregano)
- Cheese (mozzarella/american for the extra melty, but lighter cheesesteak vibes)
- Hoagie, sub, or sausage rolls (preferably toasted).
The Best Cheese for Chicken Cheesesteaks
The melty cheesy goodness is what takes this recipe from good.. to epic. Here are the best options for a chicken cheesesteak sandwich:
- White American cheese (the classic super creamy)
- Provolone (classic and melty)
- Mozzarella (mild and melty)
- Cheez Whiz (authentic Philly vibes, but not my personal favorite)
- Skinnyish Dish favorite combo: white american + mozzarella (lighter, but still melty and oh so delish)

How to make Philly Chicken Cheesesteaks
These Chicken Cheesesteaks come together fast, so once everything is prepped it’s basically a “blink and dinner is done” situation. Here’s exactly how to make them:
Step One: Prep the chicken + vegetables
- Start by thinly slicing your bell pepper and onion and setting them aside.
- Next, cut your chicken tenderloins into small thin pieces (this helps it cook quickly and gives that classic cheesesteak texture). If your tenderloins have that little tough tendon piece at the top, go ahead and cut it out it.
- Add the chicken to a large bowl. Drizzle with 1 teaspoon of olive oil, then sprinkle in the cornstarch, salt, pepper, smoked paprika, and garlic powder. Mix really well until the chicken is fully coated.
- Pro tip: I like using food safe gloves for this because it’s faster and less messy.

Step Two: Cook the peppers + onions
- Heat 1 teaspoon of olive oil in a large skillet over medium-high heat.
- Add the sliced peppers and onions and cook for about 5-7 minutes, stirring occasionally, until softened and lightly charred.
- Season lightly with a pinch of salt and pepper, then transfer the vegetable mixture to a plate and set aside.

Step Three: Cook the chicken + combine
- In the same skillet, add the remaining olive oil and add the seasoned chicken in an even layer. Let it cook undisturbed for 4–5 minutes so it can develop a golden crust.
- Stir and continue cooking for another 3–4 minutes, or until the chicken is fully cooked through.
- Add the cooked peppers and onions back into the skillet, then stir in the Worcestershire sauce. Cook for another minute or so, just until everything is warmed through and combined.

Step Four: Melt Cheese + assemble sandwiches
- Reduce the heat to low. Tear the American cheese into pieces and add it to the skillet along with the milk. Stir gently until the cheese melts completely and coats everything in a creamy, cheesy sauce.
- Once the mixture is hot and melty, spoon it into hoagie rolls and serve’m up immediately.
- Tip: For the best cheesesteak experience, lightly toast your hoagie rolls in the oven. Set it at 400°F and toast for about 5 minutes before filling them. It makes them sturdier and gives that true sandwich shop vibe.

Tips for Success (AKA How to Make These Chicken Cheesesteaks Even Better)
This recipe is super simple, but these little tips will help your Chicken Cheesesteaks turn out perfectand sandwich shop worthy.
- Slice the chicken small and thin: Smaller and thinner chicken pieces cook faster. This makes the texture feel more “true cheesesteak.”
- Don’t skip the cornstarch: Cornstarch helps the seasonings stick. It creates a light coating on the chicken that keeps it tender. This coating also helps the cheesy sauce cling to every bite.
- Let the chicken cook undisturbed: Once the chicken hits the skillet, let it sit for 4–5 minutes before stirring. Seriously, don’t touch! That’s how you get those golden brown bits that add so much flavor.
- Cook the bell peppers and onions first: Cook them separately to help them soften and caramelize. This prevents them from turning mushy. It also keeps the chicken from steaming.
- Toast the hoagie rolls: Toasted rolls hold up better and don’t get all soggy.

Variations & Substitutions
These Chicken Cheesesteaks are basically the dinner version of a choose-your-own-adventure. You can spice them up. Swap the cheese. Add veggies. You can even use the chicken cheesesteak filling in totally different meals. Here’s a few ways to make this chicken cheesesteak recipe differently:
- Make it Spicy: Add sliced jalapeños if you like some heat. You can also add crushed red pepper flakes or hot sauce. Try some pepper jack cheese mixed with American for an extra kick.
- Swap the Cheese: American cheese melts like a dream. You can absolutely switch it up with provolone, mozzarella, or monterey jack.
- Add Mushrooms: Sauté sliced mushrooms with the peppers and onions if that’s your favorite cheesesteak vibe.
- Different Chicken: You can use chicken breast, thighs, or even ground chicken in this recipe. I personally love using tenderloins because they cook quickly and stay super tender.
- Turn Them Into Sliders: Use Hawaiian rolls. Serve as chicken cheesesteak sliders for game day. They are great for parties or an easy family dinner. This makes the meal feel a little more fun.
- Make it Low Carb: Skip the hoagie rolls and serve the filling: over cauliflower rice/cauliflower mash or in lettuce wraps.
- Less carbs: Wrap it up in a low carb wrap or take out some of the bread in the middle of the rolls. I love both of these options for an extra healthy swap!
- Baked Potato Style: Spoon the cheesy chicken cheesesteak filling over a baked potato for an easy comfort food twist.
- Chicken Cheesesteak Hoagie Style: Add lettuce, tomatoes, and mayo to your sandwiches.

What to Serve with Chicken Cheesesteaks
These chicken cheesesteak sandwiches are definitely a full meal on their own, but if you want to round things out with a lil bit of variety, here are a few easy sides

- Air Fryer Sweet Potato Cubes
- Simple side salad + favorite dressing
- Air Fryer Roasted broccoli
- Chips + pickles (classic duo and very underrated)
Storage + Reheating

- To Reheat: Reheat in a skillet over medium heat until warmed through. Alternatively, microwave in 30 second increments until heated through. Stir every so often.
- Pro Tip: Toast fresh rolls when serving leftovers so it tastes like you just made it.

Made these outside on the Blackstone tonight for my family and everyone loved them! Thanks for another keeper recipe, Star!
Oh I bet that was delicious!! I’ve always wanted a blackstone, so happy these worked well on it!
If I could give this 10 stars I would! You killed it with this recipe! So easy and quick to throw together and my husband loves it. When trying to stay a little lower carb I’ll have this over cauliflower rice and it’s great! This has become a regular in our dinner rotation! Everyone should try this immediately!
Yessss! So glad you love this one Amanda!! This one totally hits the spot every time, who needs a greasy cheesesteak?!
WOWZA, these were so easy and soooo good! They will definitely be on the rotation at our house! We had them on Amoroso’s rolls- from Aldi where I now live in NC, but a Philly based company. These chicken cheesesteaks are delicious straight out of the pan (seriously, try it), but we believe that good roll is worth it and makes them even better! I toasted the rolls in the oven with our ‘freezer’ fries. Absolutely delicious! Thanks for the fantastic recipe, Starr! ❤️
Awe Sue!! Thanks so much, I’m so happy you enjoyed this version of Chicken Cheesesteaks! I agree with you about eating it out of pan, but also agree that a good roll is ALWAYS worth it!
Made tonight and devoured it! I love the chicken Philly cheese steak from Jersey mikes. Now I can just make it at home! Thx
Yesss! So happy you enjoyed. I’ve never had the jersey mike’s version, but happy to hear it’s a yummy replacement!
Just made this tonight and it was fantastic!!! Adding to my regular meal planning rotation.
That’s so good to hear!! Thank you for letting me know. =)
When does the Mozzarella cheese get added in the recipe? I read the recipe a few times & I did not see anything referencing the mozzarella cheese – I must’ve missed that step. Thanks
Hi Linda! I apologize, I just edited it. You add the mozzarella in with the american cheese slices. same step, same time. I hope that helps!
