Cheesy Sausage Hash Brown Casserole

Hey Friends! Let’s get down to business, okay? Cheesy Sausage Hash Brown Casserole. Who doesn’t love a good breakfast casserole?? There’s sausage, eggs, cheese, hash browns, a little spinach that you won’t even know is there, and more cheese. Can I get an amen?!


I had high hopes while throwing this recipe together a couple of weeks ago.
I am not big on vegetables alone.
I pretty much only eat lettuce, carrots, and celery raw. But, I love a good challenge!
and I love tricking myself into eating vegetables that are good for me.
It’s becoming a hobby. (Don’t judge my lack of interesting hobbies, please)

It literally turned into something magical while cooking in the oven. It is one of my new favorites to have prepared for the week. It’s family approved and oh so yummy!

If you read through the recipe and scrunch your nose up at the cup of cottage cheese. Please trust me, I am not a cottage cheese person and this is pretty much perfection. It adds a bit of extra creaminess to the bake that we all want, without a load of calories that we don’t need.

Cheesy Sausage Hash Brown Casserole

Cheesy Sausage Hash Brown Casserole is a healthy, easy, and delicious casserole that's perfect for breakfast and meal prep!

Ingredients

  • 8 oz lean turkey breakfast sausage, raw I use the 'Jennie O' brand
  • 1 medium yellow onion diced
  • 6 cups fresh spinach torn into small pieces (i prefer the stems removed because i don't like to chew them, but it's up to you)
  • 5 cups refrigerated shredded hash browns I use the 'Simply Potatoes' brand
  • ¾ cup low fat cottage cheese
  • ½ cup Reduced fat shredded Cheddar
  • ½ cup reduced fat shredded mozzarella
  • ¼ cup parmesan cheese grated
  • 2- ½ cups liquid Egg Whites (or you can use 12 whole eggs or half egg whites and half whites)
  • 1-2 tsp Lawry’s Seasoned Salt to tast
  • ¼ tsp pepper or to taste
  • cooking spray

Instructions

  • Preheat oven to 350 degrees. Lightly spray a 9×13 casserole dish with cooking spray.
  • In a large skillet break up turkey sausage and add diced onions. Continue to cook until meat is browned and onions are softened. Add the spinach and cook just until slightly wilted.  Remove from pan and set aside. 
  • Spray the same pan with cooking spray and add the hash browns to skillet and cook for a few minutes. Season with seasoned salt and pepper to taste. 
  • In a large bowl add in sausage, spinach, cottage cheese, parmesan cheese, and hash browns.  Stir well until combined. 
  • In the casserole dish add the hash brown and sausage mix. Pour egg whites on top evenly. Top it off with the shredded mozzarella and sharp cheddar.
    **If using whole eggs make sure to whisk well before adding the casserole dish.
  • Cover with aluminum foil. Bake for 30 minutes and then remove the foil and bake uncovered for about 25 minutes. Let sit for a few minutes and then cut into six servings. Serve hot and enjoy!

Notes

Serving size: 1/6 of casserole (these are pretty large servings so this can easily be made into 8 servings to last longer/smaller portion size if you like a smaller breakfast)

*Eggs- you can use a dozen large eggs in place of egg whites or half and half. Just make sure when using whole eggs that you whisk them with a little salt and pepper before adding to the casserole dish.

    Okay, this is delicious! We subbed out the Turkey sausage for Morningstar spicy veggie sausage patties and it’s an amazing vegetarian version! This will be in the regular rotation now!

    I have made this twice now, but I used center cut bacon because that is what I had on hand the first time. I also used Mexican 2% cheese blend, because again that is what I had. I love that it makes huge pieces. I like to feel satisfied when I eat and the serving size definitely made me feel this way. I recommended this to both my sisters and I have printed out so many of your recipes and they have been on rotation for dinner and lunch meal prep. I haven’t made a recipe of yours that I haven’t enjoyed so far!!! Please kee them coming.

    WOW I’ve made this twice in the last month! I’ll be honest I was skeptical of the cottage cheese… but I tried it and guess what, no one but me knew this casserole had cottage cheese in it! Ha! Both times I made it, I used 8 whole eggs instead of egg whites and jimmy dean turkey sausage crumbles that are pre cooked. Winner winner!

    I’ve made this several times and LOVE this casserole for weekly breakfast meal prep. I’ve followed the recipe exactly, subbed in the precooked turkey sausage crumbles, and done a version with all regular eggs. Each time it’s been delicious. I like to add hot sauce on top after I reheat!

    Absolutely loved this! Will be putting into my regular dinner rotation. I didn’t find Jenny-O ground breakfast sausage. Only thing available was Jimmy Dean Turkey sausage crumbles. I used fat free cheddar and a purple onion (what I had on hand). But besides those changes everything was the same.

  7. Can I use two ingredient dough? I’m liking the points better and not all the additional ingredients that come in the canned biscuits (although they are delicious )

    1. Hi Joy! This casserole has hash browns, not biscuits. I’m not sure if you meant it for another recipe, if you did, you can try it. I have seen others make them with the two-ingredient dough, but I personally have no tried this method yet so I can’t give measurements, times, etc. If you do let me know!

        Bahaha! I was looking at this and your meatball recipe at the same time. Made that two nights ago and have this dish in the oven for dinner. It smells amazing! How would you subsitute egg whites for eggs? Still 2 1/2 cups?

  8. Sorry, if this is a dumb question. Can I prep this today and put in fridge and then cook tomorrow?
