2018 Top Ten Skinnyish Dish Recipes!

Hey y’all! What a year it’s been in the Skinnyish Dish world. Let’s start by realizing that “The Skinnyish Dish” world was actually “Daily Dose of Pepper” world for the first five months of this year, before we rebranded in June! It was tough on me changing the name, but it was the right thing to do. I think The Skinnyish Dish fits much better with what I’m trying to accomplish on a daily basis, and I hope you agree. If you’re new around these parts and wanna know why I changed the name and read a sappy post, click right here! I could sit here and ramble on for at least 29,000 paragraphs about 2018’s highs and lows, because let’s be real- it’s been a year full of’m! But we’re gonna keep it short n’ sweet, and share The top ten recipes of the year. This info was gathered from what I see on my end of things behind the curtain (a whole bunch’a boring analytics and data sets and that type of mumbo jumbo). But I’ll just show ya the delightfully delicious yummy photos instead, because that’s a very best part of it, right? (well besides eating it) A couple that made the list really surprised me! That makes me so happy because I honestly love all of the recipes that I share with you, and sometimes my favorites don’t catch the wind and fly as high as some others do. But hey, that’s okay too! Ya gotta know that’s just how the cookie crumbles in interweb land.

10. One Pot Bacon Cheeseburger Pasta
This recipe came about one random day when I just really, really wanted a cheeseburger, but I also wanted pasta. I thought- “Hey, why not just mix the two and call it a day?”… and it was magical. I’m so happy y’all love it, and that it made the top ten!
9. Loaded Chicken Bubble Up Bake
An oldie, but a real goodie! This bake is such an easy and delicious weeknight option! Another one that came from me craving something super indulgent, on a day I didn’t wanna break the point/calorie bank. I was kind of surprised to see it in the top nine… not because it’s undeserving, but because it’s from a couple’a years ago. Happy to see it’s still a reader fave, because it’ll always be a fave in our kitchen too!
Literally came up with this recipe on last year’s frigid New Year’s Eve when Eric and I had big plans to go out and about and a babysitter and everything, but decided to just stay home, cook, and watch back to the future. So here we all are, almost exactly one year later, and seeing it in the top 10 makes me do a hap-hap-happy dance! I absolutely love this dish so much. It’s hearty, and flavorful, and wonderful, and it just works in so many ways… all by itself in a bowl with a lil cheese on top and some fresh tomatoes and cilantro for a garnish, or in taco shells for the ultimate Cowboy taco, or throw some leftovers on a plate for breakfast and put an egg on it! It’s so versatile, and it totally wins everybody’s hearts and/or tummies over.
8. One Pot Chicken Con Broccoli
No surprise here. In fact if this wasn’t on the top ten, I would have had a serious talk with y’all about how you need to make this right now.
It’s incredible! End of story.
5. Make Ahead Freezer Friendly Breakfast Sandwiches
I created/posted this recipe 3 years ago, and since then, I’m pretty sure these have been on the top ten recipes list every year. They’re delicious, healthy, and easy. They’re basically the holy grail of breakfast on the go and I love’m! If you haven’t made these yet, go get it done, friends!
Another reader fave for the past few years! I’m a little surprised to see these at number five instead of two or three, because I don’t think a day has gone by where I didn’t see multiple Instagram posts of these being cooked up. I think a lot of you know these tacos came to happen completely by accident, but I’ll tell ya the quick version again… I was playing around in the kitchen, trying for something, I can’t even remember what anymore. That idea didn’t come together the way I wanted, so I just threw these together, and they ended up being our favorite food in the world! So I had to share’m with y’all. Aren’t happy accidents the best things in life?
4. Creamy Sweet Corn Pasta Salad
Okay, this one was a pretty big surprise… and I love it! This could be the best pasta salad in the world, don’t get me wrong. But because people generally only make pasta salads in the warmer months, recipes like this only gets shared for a handful of months out of the year, y’ know? In conclusion, this means you guys must have made a lot of this sweet corn pasta salad during the summer for it to make the top ten for the whole year! How exciting! I can’t wait to start making it again. Actually, I think I might just make up a big batch next week and pretend it’s summer… because it’s so dang cold outside!
No big surprises here! This is hands down the best marinara sauce I’ve ever tasted. The End. No sugar or added oil makes it a healthier option for every day use. We also love that it’s budget friendly and totally tasty.
2. Crockpot Creamy White Chicken Chili
This chili is number one in my heart, especially during the colder months of the year. It’s so amazingly low in points! I love having it almost daily for lunch. It’s the easiest recipe in the world, It freezes well, and the flavor is better than something you would grab at a restaurant. I love playing around with Tex-Mex flavors! And I don’t want to sound too cocky- but man, I kinda did hit this one outta the park. Ha! (sometimes we need to give ourselves a pat on the back, right?)

Aaand the number one recipe of the year is…..
The skinnyish version of fried chicken take out!
I was super suprised by this. I mean, We just love it, and I know y’all love it… I see it being made all of the time! but I was just surprised. I’m glad it’s number one though, because it’s pretty dang delicious, and so easy! All ya really need is chicken, flour, spices, and pickle juice, and yer a handful of steps away from a warm, delicious, and healthy dinner.
There it is! This was so fun to put together. I love looking back on these recipes and remembering how I came up with them, what I love about them, and seeing other families love’m!

Yeah!! I based my menu on your top from 2018 list for this week!!! Last night we had the Creamy Sweet Corn Pasta Salad and it was out of this workd delish!!!! I was a pig and had 2 servings and I have no idea how many servings my hubby had! He really pigged out on it!
